Split the wing into two at the joint – the mini drumstick and the oval shaped part.

Deep fry until extra extra crispy.

In a saucepan, melt half pound of real butter (serves about 4)  on a low heat, add a couple of tablespoons of cider vinegar and then a good dollop of Tabasco sauce. Obviously Tabasco is a matter of taste. Minimum half bottle of Tabasco in my house. Stir until the mixture takes on that glossy, almost luminous orangey glow.

Toss each batch of fresh wings in the mixture and serve with sticks of celery (if you like that sort of thing) and a Blue Cheese Dip.

Blue Cheese Dip is basically:

  • Cup of sour cream
  • Half Cup of Mayonaise
  • Clove of garlic crushed
  • Tablespoon of Cider Vinegar
  • Squeeze of lemon juice
  • And half cup of blue cheese crumbled
  • Chopped parsley
