It's thirsty work lads!

The craft beer market has exploded over the past few years, and Ireland is right up there with some of the best brewers in the world. 

Cathal O'Donoghue is the co-founder of Rascals Brewing Co. in Dublin, and what he does't know about making top quality tipples isn't worth knowing.

If you're thinking of setting up your own microbrewery, Cathal has this key piece of advice, "keep the recipe simple".

When asked how so many variations of beer are made from the four main ingredients, the brewer says, "there's loads of different types of hops, they can be really piney, resinous, kinda dank flavours, or really fruity citrus flavours". So these factors, along with the inclusion of all kinds of wacky flavours means the possibilities are endless. 

O'Donoghue also tells us the best and worst beers he's ever tasted and speaks of the challenge there is going up against some of the big dogs in the market. But he doesn't ditch them saying, "it's always good to have choice".
