Well Lorraine O'Toole has been one of these dairy hypnotists (nothing to do with cows and pocket watches) for over 30 years. Her business Lorraine's Ice Cream brings joy to the people of Dublin and Wicklow, so we wanted to find out what it's like to have so much power in your hands.

She told us how the key to the perfect 99 was, "a good strong hand and a smile", that summer was the busiest she remembers (global warming ehh??) and what song is best to get the punters attention.
