Just Add Bacon: Three Drool Worthy Bacon Meals Which Will Make Everything Better

Fact: Bacon makes everything better, and here in Ireland we have the best bacon in the world right on our doorstep.

Where would we be without the stuff?!

In a total celebration of all things bacon we've put together three easy, yet lipsmackingly delicious, bacon meals for you to try out at home.

As the summer slowly rolls to an end, and the kids head back to school, break out the BBQ one last time and let the bacon do the talking.

Remember! You don't make friends with salad!

Make Mine A Double

You can't go wrong with a bacon double cheeseburger.

That means twice the meat, twice the bacon and twice the cheese.

This is the definition of a cheat-day meal, but once it's made right, it's totally worth it.

You'll need:

Brioche buns
Freshly ground high quality mince
Baby gem lettuce
Fresh tomato (on the vine)
American cheese
O'Neills Dry Cure Bacon

What to do:

What goes on the bun is your business, mustard, ketchup and/or mayo is your choice, but for the ultimate flavour explosion follow this method for mouthwateringly succulent burgers.

Take the mince, wet your hands and shape into generously sized patties.
Season with plenty of salt and pepper.
Grill on a medium heat until cooked.
Using the juice of the burgers, fry off some bacon.
Place a slice of American cheese on top of the burger as it rests, letting it melt into the meat.
Build your burger, sit back and enjoy.

Pasta Heaven – Bacon Mac N Cheese

Pasta, cheese and bacon in one dish?

SOLD.

You’ll need:

1 (500g) packet macaroni pasta
2 tablespoons olive oil
2 tablespoons plain flour
1-2 teaspoons wholegrain mustard
600ml milk
450 grated Cheddar cheese
salt and cracked pepper to taste
6 slices of O'Neills Dry Cure Bacon, diced

What to do:

Preheat your oven to 170 C
Cook the pasta and pop it into a baking dish.
Fry off the bacon and set aside.
Heat some oil in a saucepan, remove from heat, add flour and stir to mix. Add in a little milk and the mustard 
Return to the heat. Gradually add the remaining milk while stirring constantly until the sauce has thickened.
Remove from heat and add cheese.
Once that has melted, add the bacon
Season generously with salt and pepper.
Pour the sauce over the pasta and mix thoroughly.
Bake for 20 minutes 

Try to resist eating this in all one setting, this dish is even tastier heated up the following day.

How Do You Like Your Eggs In The Morning?

The Irish Breakfast is famous around the world, and while many debates have raged from house to house on whether it needs beans or mushrooms, hash browns or toast, one thing that is always a given is bacon.

As long as there is good quality bacon piled high on the plate then everything else doesn’t matter.

Use big juicy sausages, tasty black and white pudding, fresh soda bread and good butter, topped with O’Neills Dry Cure Bacon to achieve Irish Breakfast perfection.
