Bobby has his Top Tips every Saturday on Weekend Breakfast

Weekend Breakfast is teaming up with Children’s Health Foundation for The Great Irish Bake, taking place on 27th March.

And to help us along for this years campaign we have our own Little Baker… his name is Bobby Sherwood and he is from Arklow – he’s 14 years old --- and we have had him on the show as a guest a few times and following him on his Instagram @ bobbys_baking and he even has his own catchphrase: “Bobby Bakes It Better”
We are delighted to have him on board!!
Every week he will share one of his favourite recipes... this week it's: Vanilla Cupcakes
Bobby's Top Tips : 
* Let them cool for 10 mins before remove from tray
* It’s a wet batter so if u getter some batter on your hands make sure to Shake it off
* Make sure your butter is at room temperature before you start
* Pre heat your oven to 190c
* Sieve the flour to ensure best results
Ingredients
*     100 g castor sugar
*     100 g butter or margarine
*     130 g flour
*     About 1 tablespoon water
*     2 eggs
*     ½ teaspoon baking powder
*     Vanilla flavouring
Instructions:
1. Have the butter or margarine at room temperature. Put it with the sugar into a bowl and beat until white and creamy using a wooden spoon or electric mixer. When using an electric mixer, follow the instructions supplied by the manufacturer because there is danger of over-beating.
2. Beat the eggs and vanilla flavouring and add gradually to the creamed butter and sugar. Beat well. If preferred, the eggs may be broken and beaten into the mixture one at a time. A little sieved flour may be added between each addition of egg if liked.
3. Fold in the remainder of the flour with a metal spoon, adding a little water if necessary to make a dropping consistency. Add the baking powder mixed with the last addition of flour.
4. Put the mixture into cake cases evenly.
5. Bake in a 190°C fan oven for 15–17 minutes until cooked through and lightly golden.
