Catherine Leyden’s Foolproof Pancake Tips with Odlums

The Perfect pancake!

  1. Place Odlums Perfect Pancake flour into a bowl
  2. Make a well in the center of the flour, break in the egg and add about a third of the milk. Beat well, gradually pouring in the rest of the milk and drawing in the flour to make a smooth batter
  3. Pour batter into a jug and allow to stand for about 30 minutes
  4. Brush a pancake pan or frying pan with oil. When the pan is hot, give the batter a stir before pouring a thin layer onto the pan.
  5. Fry until golden brown. Turn and fry the other side until brown also.
  6. Stack pancakes on a large plate, as they are cooked
  7. Spread with chocolate sauce, roll and add ice cream

Quick Pancakes American Style

  1. Simply add 375ml of milk to Odlums Quick Pancake American style bottle
  2. Replace cap and shake until mix is fully dissolved
  3. Add oil to frying pan. Pour enough batter to form 14cm/6inch pancakes
  4. When batter is puffed and bubbling on top, turn and cook on other side until golden brown in colour
  5. To finish, place two warm pancakes on a plate and top with a scoop of vanilla ice-cream and fruit in season. Drizzle over raspberry coulis and dust with icing sugar 

Quick Pancakes Crepe Style

  1. Simply add 375ml of milk to Odlums Quick pancakes bottle
  2. Replace cap and shake until mix is fully dissolved
  3. Add oil to frying pan. Pour enough batter to form a large/ thin crepe styled pancake
  4. When batter is puffed and bubbling on top, turn and cook on other side until golden brown in colour
  5. To finish, place the war, pancake on a plate and top with a scoop of vanilla ice-cream and fruit in season. Drizzle over raspberry coulis and dust with icing sugar

Some of Catherine's favourite fillings...

  1. Dust with caster sugar, add a squeeze of lemon juice, roll up pancake and serve
  2. Fresh fruit in season and whipped cream
  3. Thin spreading of chocolate spread and slices of bananas
  4. Stewed apples, flavoured with cinnamon and a dollop of fresh cream
  5. Drizzled with Shamrock Maple Syrup
